Spiced Silverside

Ingredients:

1.8kg Silverside
1 medium onion, skinned and sliced
4 medium carrots, peeled and sliced
1 small turnip, peeled and sliced
2 celery sticks, peeled and chopped
8 cloves
125g soft brown sugar
½ tsp mustard powder
1 tsp ground cinnamon
Juice of 1 orange

Method:

  1. Place joint in a large saucepan with all the vegetables. Cover with water and slowly bring to the boil. Remove any scum,
  2. cover and simmer for 3-4 hours until tender. Allow the joint to cool in the liquid.
  3. Drain, then place the meat in a roasting tin and stick the cloves into the far. Mix together the remaining ingredients and smear over the fat.
  4. Bake in the oven at 180 oc for 1 hour, occasionally basting.
  5. Serve either hot or cold.
